台式凤梨酥 (Taiwanese Pineapple Tarts)










回来了几天,即使是三个小时的时差,身体一时还是无法适应过来,每天一到早上4点钟,身体闹钟就自动启动,眼光光的等天亮。自然也打不起精神来做烘培。

这次的女人行是非常休闲的,没有奔波劳碌,除了参观了丁点的景点外,大部份时间都泡在餐厅,咖啡厅和service apartment的客厅里。这样的旅行固然好,但是肚子真的很受罪,每天都撑到极点,体重也直线上升,竟然打破我多年的体重记录。。。我的天啊。。投诉给爸爸听: “爸,我很肥了,难看咯!” 爸说:“那里有肥,胖罢了啦!”哎唷。。爸爸,你还是很幽默,一点也没有婉转安慰,还赠了个“胖”字。。呵呵!

这次悉尼之旅是我第一次见到Jessie本人。原本就已经好像很熟络了,但是竟然这还是第一次见面。两个女人约好星期日中午见面,不止午饭,午茶,连shopping也一起走了一圈。

这个凤梨酥做了两回,那天赶着带去给WingSin Kaan没能来得及照相做纪录,所以今天再来一回。这个黄梨酥我们都很喜欢,真的很香很酥,好好吃喔! 除了谢谢分享好食谱的鲸鱼老师外,也要谢谢很有心思的Cass。记得那天当她把模子交到我手上时,说了“我看你因该没有这个,所以给你买来了这个”。看到模子,高兴得很,因为这个真的想要了很久。。谢谢Cass看穿我心意。


材料:
125g 牛油
15g 糖粉
1.5 蛋黄(B蛋)
190g 低粉
30g 奶粉
市售凤梨馅

做法:
1)将牛油及糖粉(我用桌面打蛋器中速)打至松大约两分钟)转低速,逐粒把蛋黄加入拌均匀。
2)把过筛的低粉及奶粉一次加入,混合均匀即可用保鲜纸将面包好,放入冰箱休面30分钟。
3)取出适量的面,包入料,搓入模型里
4模把面排入铺纸的烤上,以165度烤25或呈金黄色即可。



Ingredients:
125g butter
15g icing sugar
1.5 egg yolks
190g low protein flour / cake flour
30g milk powder
store bought pineapple filling

Method:
1) Beat butter and icing sugar together until fluffy and pale ( abt 2 mins on medium high speed). Switch to low speed, beat in egg yolk until just combine.
  
2) Add in sifted cake flour and milk powder. Beat until just combine (do not over mix). Wrap the dough with glad wrap, rest in the fridge for 30 mins.

3) Divide dough into small round balls (35g each) , flattened the dough and wrap with pineapple filling (25g each). Insert into pineapple tart mould.

4) Place the mould filled with pineapple onto a baking pan lined with baking paper. Bake in preheated 160C for about 25 mins or cook.

35g皮,25g,Square mould - 35g dough,  25g filling 
- 32g皮,22g馅,  Flower mould - 32g dough, 22g filling

Nutella Double Choc Cookies






2006 Curtin 大学收留了我的,我独自来到柏斯。当我已是中年学生了,离开我上一次念大学也有十年的事。。。所以有点害怕,有点彷徨。孤的坐在大大的讲厅里好无聊。小小的我最喜欢躲在角落,最好老看不到我,不要发问问题,因在听不懂,也很不真的上是留意到坐在身后一位和我一样孤独的女孩。两个孤独的眼神相碰,吱吱跟我交朋友的信号。。。自我介后,知道她叫Wing从此两人逐Wing是个很醒目很明的女孩,当我就像寄生虫一黏得她死死的,她什么科,我就什么科,反正只要功可以一起做我就很安心了。这样黏啊黏的,两年半的大学生活我都是出双入,一起上,一起吃午直晚也很常相,一起K,一起旅行。当然除了校园的活动是我们两个,户外活动一定不会少了Wing的姐姐SinKaan。两个护士加一个医生,大家是圈中人,我们的话题可多得很。

为了梦想,她们两姐妹几年前离开柏斯,现在定居于Darwin。虽然遥远,但是风筝没断了线。。依然密却问候,依然对对方的生活关心。因为是同行,所以大家都能了解行内的苦,自然Wing就是我诉苦的最好对象了。

五月的某天,Wing给我来电话问想不想一起去悉尼,顺便去一趟Tasmania。好久都没见了就这样决定在悉尼见吧! 明天一早我就要去悉尼和她们两姐妹约会了。好期待这次三个好友再次一起旅行的日子。

今天选来了我很喜欢的食谱作者。更欣赏她的照相天份。Katie暗色背景食物拍得分外吸引,擅长rustic 的风格。喜欢食物摄影的朋友不要错过她精彩的网页:




INGREDIENTS
250g butter, cubed at room temp.
1 cup caster sugar
½ cup brown sugar
100g chocolate, melted and slightly cooled
2 eggs
3 tablespoons Nutella
3 cups plain flour, sifted
1 cup roasted pistachio, roughly chopped or halved
230g chocolate chips ( I used Reese’s peanut choc chips + dark choc chips)

METHOD
1. Preheat oven to 180˚C (350˚F)

2. Line 2 large baking trays with non-stick parchment or with silicone mats
      In the bowl of a food processor/stand mixer or using a hand-held mixer,beat together softened butter, caster sugar and brown sugar for 8-10 minutes until super creamy, smooth and fluffy.

3. Add the cooled, melted chocolate and beat again lightly to combine.
Crack in the 2 eggs, add the Nutella and combine.
Add the flour, nuts and chocolate chips and stir to incorporate everything together thoroughly.

4. Using a teaspoon ( I used tablespoon for larger cookies) distribute the mixture evenly over the two trays and bake for 15-20 minutes or until the cookies are crisp and golden.

Note :
To achieve a more styled look half way through baking remove the trays and add a few extra halved hazelnuts and chocolate chips to the tops of the cookies then return to the oven
